Slow Cooker Pot Roast with Lime and Green Chilies

I know that traditionally people use pork roast for this kind of recipe. But I have 1/4 of a beef in the freezer and a conventionally raised pork roast was around ten dollars at the store.

So I used a lovely grassfed top blade roast out of my freezer.

It took me 5 minutes to put the ingredients in the slow cooker before I went to work. Even the pickiest people in my house loved this :)

Recipe

*1 onion, quartered

*3-4 cloves garlic, pressed or minced

*1 - 7 oz can green chilies

*1/3 cup fresh lime juice

*1/2 cup water

*1 Tbsp cumin

*1 tsp oregano

*sea salt to taste (Celtic, Himalayan), I used 1 Tbsp!

*2 to 2 1/2 lb pot roast

Put all ingredients except the roast into the slow cooker. Mix thoroughly. Add the roast and spoon seasoning and onions over the top. Cook on low heat for 6-8 hours. I like to serve this with baked squash.

Not too complicated for a weekday, right?
